Simple Summer Supper: Calabacitas


A long, long time ago, I can still remember, the way she used to make me...Calabacitas. 

My mom used to make this dish (Clint's mom did too) in the summer with fresh zucchini from the garden.  I only vaguely remembered having it.  But what I did remember was that it was a great summer meal. 

The fresh veggies makes it a great summer meal.  And the green chilies made my hubby a fan.  But even better than that, it is really quite an easy meal to make. 

Let's make Calabacitas!!!

First, brown some hamburger meat, drain, and set aside.



Thinly slice two medium zucchinis.

 Saute in butter.


Add cooked hamburger meat, corn, green chilies, salt, cumin, and garlic.

Combine.

Add shredded cheese.

Combine until cheese is melted.

 
Mmmm, simple summer supper.  Enjoy!!

Calabacitas
1 1/2 lb hamburger
2 med zucchini, thinly sliced
1/4 cup butter
2 cups whole kernel corn
4 oz green chilies
2 teaspoons minced garlic
1 teaspoon cumin
2 teaspoons salt
1 cups shredded cheese

Brown beef.  Drain and set aside. Saute zucchini in butter over medium low heat until slightly tender, 10 minutes.  Return meat to skillet.  Add corn, chilies, garlic, cumin and salt.  Cook stirring occasionally until meat is tender, 10 minutes.  Add cheese, stir until melted.
